Chilean Sea Bass with Brown Butter Sage

IMG_8447

Wooohoo! Wooohoo! Wooohoo! Is the sound blaring from my speakers. The song is Adventure of a Lifetime by Coldplay. It’s one of those songs that just make you feel so good! Especially the part he sings “You Make Me Feel Like I’m Alive Again!” I love this song I’m reminded of that beautiful spring day we drove down the freeway with the top down on my car and we were both just smiling having no idea where we were going only that we knew we felt good.

So as I listen to this song sipping on my coffee, I was thinking of a dish I could make that would remind me of that special day….. Hmmm Chilean Sea Bass in brown butter sounds Fantastic! Now the dish sounds luscious, Sinful and unfriendly to the waistline and usually it is but,… We are going to make it waistline friendly ๐Ÿ™‚ So here is your list to recreate the dish that reminds me of that day.

What You Will Need:

4 Filets Chilean Sea Bass (Please by the fish fresh from your local market)

2 Large Yellow Squash, peeled

2 Large Zucchini, peeled

6 Cloves Garlic, sliced thin

2 Lemons, juiced

4 Tbsp Butter

1 Small bunch of Sage

Salt, and Pepper

Prep Your Mis en Place ๐Ÿ™‚

IMG_8436

Pre heat your oven to 450.

Thinly peel your zucchini, and squash.

IMG_8440

Like this. Add to a pan on the stove set to medium high heat.

IMG_8441

Cook for 5 minutes then set aside.

On a baking sheet lined with parchment paper, add the filets and sprinkle with salt, and pepper.

IMG_8439

Once the oven is preheated, place the fish in the oven and bake for 8 minutes.

IT IS VERY IMPORTANT TO TIME YOUR FISH! You don’t want to over cook the poor thing.

While the fish is baking, in a pan on the stove set to medium high heat, add the garlic and butter.

IMG_8442

Once the butter melts and starts to brown, add in the sage and the juice of two lemons.

IMG_8443

The butter will start to brown along with the garlic just in time.

Ding! Your fish is now done and so is your sauce.

Place the squash and zucchini on your plate, lay the fish down and top with your pretty little sauce.

I can’t tell you how easy this dish is to make! Most of the time people are afraid to cook fish on their own because they are easy to over cook. Trust me, don’t be!

Makes 4 Servings:

313 cals, 25.9 G fat, 6.6 G carb,3.6 G fiber, 15.5 G pro, 3.4 G sugar

Only 313 Calories for a dish that will fill your belly!?? I’ll take it.

Jicama Salad with Radish and Avocado

IMG_8172

It’s finally raining here in OZ and Iย can’t tell you how much we need it! I have all the windows open in my home and the smell of the first rain of the season is intoxicating! Lightly in the back ground Come Undone by Duran Duran is playing and as the breeze blows my curtains I can hear the distant laughter of my Baby Eden who has gone home echoing in my mind… I miss the way he smells, the way he looks at me, and the way his sweet hand felt on my cheek. I wonder if he thinks of me as much as I think of him??

Oh No EDEN don’t cry!!

IMG_4141

Oh but I can’t help it! I miss him so much. He was my little companion during my morning coffee, afternoon walks, and evening wine. Goodness EDEN! Maybe I need to add a little jalapeno to my freshly juiced kale?? That ought to snap me out of it.

Sigh…. I want to be around for my family for a long time so I have been looking at my diet to see what kind of nutritional tweaks I could do to it. Baby EDEN

IMG_6200

Its been awhile.. But I have a wonderful excuse and I’m so excited to share it with you all. My journey took me 516 miles away from my home in OZ, running through airport terminals hoping to catch an earlier flight towards my destination. I’ve often waited for my connection flights watching people run like mad towards their connection wondering, what were they in such a rush for? Were they in a hurry to catch an important meeting, rushing to see loved ones, or were they like me, rushing for my reason? So before I tell you my reason…

Break out the Champagne and grab a good cigar I’m having Moet White Star and an Opus X and I’m listening to Barber: Adagio For Strings played by Zรผrich Baroque Strings (You have to play this.) because……

IMG_6457

IT”S A BOY!!!

IMG_6494

Meet baby EDEN. (Grand baby EDEN)

I was so honored to be asked to be there for the birth of my first grandchild. It took two days for him to come into this world and even all the coffee in the world couldn’t help keep us awake.

(Day one) After 24 hrs. I’m sucking down coffee like MAD.

IMG_6368

Day two lol.

IMG_6295

Even my son took his 5 minute naps when he could.

IMG_6301

The moment I started to shed my tears quietly was watching an expectant father keep his silent, constant watch over his wife, praying for a safe delivery for them both. Ready as a soldier (that he is) to jump at any moment to get her whatever she wanted, or needed.

IMG_6327

Then the moment came……

IMG_6256

Happy Birthday my sweet baby EDEN.

IMG_6576

I love my children, andย  I love them so much I wonder “How could my heart possibly love anymore?” …Then your heart grows even bigger.

IMG_6470

The small sounds he makes, the way he smells, everything about him is wonderful!

IMG_6447

After sometime I headed back to their home to get food ready and allow the sweet new family to bond in peace. So what did EDEN do?

Celebrated!

IMG_6438

I had a wonderful time that evening. It was a little lonely, but it was nice to be with my thoughts. Thoughts of his future… What will he be like when he grows up? Who will be the first to win his heart? Who will be the first to break his heart??…. Oh baby don’t you worry! Foxy has you! (Foxy is what they call me instead of grandma.) LOL.

Ok, baby is on his way so I better get to cooking meals for the new family to have for the week.

IMG_6473

Look at that face!!

IMG_6692

After the week flew by I was heading home…..

IMG_6514

That had to be the loneliest plane ride home.. I was bawling! This time I slowly made my way through the terminal to catch my connection. There were no earlier flights to grab so I sat and watched others rushing around wondering if any of them were on their way to meet a new loved one coming into this world.?

Then I got a phone call from my son who said that they were going to baby EDEN’S appointment in the morning and if they get the “All clear” from the doctor they would be up the next day!

All clear!

IMG_6750

One day apart was too long.

Here is a hilarious picture my daughter in laws mom made of baby EDEN portraying what he would be like if he was mine. I DIE!!!

IMG_6506

Every second I had him, I was memorizing everything about him.

IMG_6609

IMG_6631

Holding him I would pray for him. I would pray for his future…

IMG_6671

In his sleep I would make silent promises to him that only he would know…. Then 2 weeks flew by and I had to say goodbye to him.

IMG_6766

How do you do that? How do you tell your heart not to break???

How do you say goodbye to this face!!??

IMG_6637

Oh baby EDEN I’m here and will always be here for you…… I LOVE YOU!!

I promise, I promise, I promise to continue to pursue good health and nutrition so I will be here to see what your bright future holds for you.

Cheers! To eating Waistline Friendly Meals to insure many years to come!

Fresh Basil Pesto

IMG_5415

With the heat index hitting OZ at 110 degrees I am actually felling very relaxed and comfortable as I sit outside on the patio enjoying some good company. I think to be comfortable in 110 degree weather you need to be with good company or else lets face it, it would be pretty darn miserable outside!! Lol! ๐Ÿ™‚ Have you ever noticed how good company can help you forget how miserably hot it is? Or have you ever had a bad meal that you didn’t realize was bad because you were having so much fun with the person you are with? To me its a good reminder to always be someone elses good company ๐Ÿ˜‰

The silky voices of Ambrosia are seeping in the air as they sing You’re the Only Woman. This song would make any girl feel special! Take notes!! I’m sipping on a glass of Joel Gott Cabernet getting read to enjoy an Opus as I look out at my garden amazed at how my basil has taken off! Just like my zucchini, I have way to much. What am I going to do with it?? PESTO!!!

IMG_5870

I know pesto can be fattening buuut, it’s made with a heart healthy olive oil and in moderation, it’s sooooo good for you. That’s another reason it’s good to pay attention to your diet, so you can enjoy a serving of fresh pasta with pesto on occasion ๐Ÿ˜‰ so jump in your car to hit the store and I will tell you..

What You Will Need:

2 Cups fresh Basil (Basil is so easy to grow I encourage you to grow some in a small pot)

1 Shallot, rough chop

6 Cloves Fresh Garlic, rough chop

1 Cup Raw Pine Nuts (You can use walnuts if you prefer)

1/2 Cup Olive Oil (Save 1 tsp to rub on your face, Seriously! That’s all I use for skin care and its cheaper than any lotion in the store.)

I know, get on with it EDEN

1 tsp Salt

Time to put on a song that make you feel chill and

Prep your Mis en Place Love ๐Ÿ˜‰

IMG_5506

With your shallots, and garlic, do a rough chop to help out your worn out blender.

IMG_5508

Toss the shallots, garlic, basil, pine nuts, and salt into your blender.

IMG_5509

Start to blend slowly and add in the olive oil.

IMG_5510

Look at you getting so fancy making your own sauce!! I find it very satisfying ๐Ÿ™‚

So since you normally eat waistline friendly, add in some fresh made pasta.

IMG_5868

There is a huge difference between fresh pasta and store-bought pasta. If you can I encourage you to do so.

Makes 4 Servings (without pasta)

188 cals, 20.3 G fat (HEALTHY) 1.5 G carb, .6 G fiber, 1.5 G pro, .4 G sugar

Extra: Instead of using pasta, be kinder to your tummy and use fresh zucchini noodles. Simply use a shredder to creat the noodle effect. If you go to my tip page you will see the tool I’m talking about.

EXTRA EXTRA! You will need to brush your teeth after eating this meal lol! But hey that’s healthy too! ๐Ÿ˜‰

IMG_5104

“Cause you… play me like a symphony…play me till your fingers bleed. I’m your greatest masterpiece….. You ruin me.” Oh my goodness this song is so beautiful! It’s You Ruin Me by The Veronicas. I wonder what happened to her? I feel for anyone who would ever feel that way. Maybe this song is a little to heavy for this dish but it’s creating emotion in me that will pour out into my food so its worth it ๐Ÿ™‚ Speaking of pouring….

IMG_5776

I don’t know which one to choose! I’m thinking of starting left to right. lol I kid! ๐Ÿ˜‰ I’m going to stick with just a single Gold Label Johnnie Walker up. It’s a beautiful peaceful evening so I think I will sit on my porch with my drink and smoke a lovely cigar, OPUS for tonight!

Stuffed Zucchini

IMG_5426

I am so digging this summer! I enjoy simple evenings sitting on my back patio watching the sunset, occasionally enjoying an evening cigar with something cool to drink. I often think of recipes and how to make them better for you, for me…. U2 is on and I’m listening to Stay (Far away, So Close) as I smoke on a cigar that I haven’t tried before, It’s a My Fathers and I rather enjoy it, it fits the evening perfectly.

IMG_5431

Puff… I had a pretty good first harvest of my zucchini. My problem is what am I going to do with them? I have so many and I can only make so much bread orย  so many muffins I’m going to have to resort to making wigs out of them! But before I do that, I think I’m going to stuff those suckers ๐Ÿ˜‰ Yes, That is what I’m going to do, the wigs will have to wait.

IMG_5378

Look at my babies! They make me so proud! Hopefully you all are feeling as chill as me so turn up that song, sway a little bit and I will tell you…

IMG_5410

IMG_5412

Add the cooked sausage to your yummy sauce.

IMG_5417

IMG_5419

IMG_3949

I’m baaack! ๐Ÿ™‚ and even better I was able to come up with some delicious dishes with minimal ingredients! Let’s face it, its BEAUTIFUL outside and as much as I LOVE cooking, I want to play outside. Hmmmm, maybe I need to start cooking outdoors. Take My Breath Away by Berlin is playing and its making me daydream about someone I love. Look around you next time you hear this song play, I promise every lady in there will light up. I’m sipping on a glass of Champagne in total peace at this moment. I love how some of my favorite things in life goย  so well together. Music, wine, food.. add in a cigar and good company and I wont need anything else in my life.

I hope this recipe pleases you so I will tell you

What You Will Need:

4 Large Leeks, cut length wise white and light green parts only

4 Chicken Breast

8 Cloves of Garlic, cut in half

8 Sprigs of Lemon Thyme (I love being able to pull ingredients from my garden)

1/2 Cup Heavy Cream

2 Cups Chicken Stock (homemade if you can)

Salt and Pepper to taste

Now that you have what you need, prep your Mis en Place ๐Ÿ˜‰

IMG_3937

Pre heat your oven to 425 degrees. In a glass baking dish, line up the leeks and tuck in the garlic, and thyme in between them.

Pour the chicken stock over them and place in the oven for 40 minutes.

You are braising can you believe it?

IMG_3939

While the leeks have been braising for 30 minutes, heat up a large pan on the stove and add the chicken breast sprinkled with salt and pepper to sear them.

IMG_3940

Like This.

IMG_3941

It’s about 3 minutes on each side, they will not be fully cooked we are just trying to ensure that we seal in all the juices.

Once you are done, set the chicken aside until the leeks have braised for 40 minutes.

Turn the heat off the stove but don’t get rid of the pan or anything left in the pan like the brown crunchy stuff.

After the leeks braised for 40 minutes, take them out of the oven.

IMG_3942

Add the chicken breast to the top of the leeks.

IMG_3943

In the same pan you seared your chicken in, add in the heavy cream, salt and pepper,ย  stir on low heat for 2 minutes.

EDEN In Manhattan

IMG_6279

I am so excited to share just a small part of my trip to New York with you. I would love to show it all but, I don’t think there is enough time in the day to go through all of it. So I’m just going to show some of the highlights. It was so hard to choose which food photos I wanted to share, I had so many wonderful meals so I took the whole experience into my consideration.

I’m sipping on a black pikes place coffee while The Red Hot Chili Peppers sing Around the World to me ๐Ÿ˜‰

IMG_6123

Ok, to start here is a shot of me waiting for my connecting flight out of Dallas Love Field. I am texting my girlfriend hoping and praying that the guy sitting behind me coughing wont get me sick! I was so hunched over and after a few minutes I figured what the heck? And I just pulled my scarf up to my eyeballs.

IMG_6179IMG_6177

If you ever go to NY you have got to go to the Empire State Building. There is so much to see in New York that it would take weeks to see it all. The view is amazing and could be overwhelming it reminds me of just how small I am.

IMG_6190

Ok time to eat, drink, and be merry. One of my favorite drinks is a Basil Hayden Manhattan. What better place to have a Manhattan than in Manhattan? By the end of my trip I will have found the perfect Manhattan.

First stop is Raw: Just looking in the windows from the outside I knew this was going to be a great stop. Almost every customer was laughing and having a good time. The glow from the lighting looked so warm and inviting I’m going in!

The waiter was absolutely helpful in describing the menu and setting me up with my first Manhattan.

IMG_6168I

When it came time to order, I just asked the knowledgable waiter what he recommended, and happily ordered that. I was ordered a Bison grass-fed Burger, medium with an aged smokey cheddar cheese with a chipotle aioli. He did not let me down!

IMG_6167

The next morning I hit Times Square. In every direction you looked up and down and side to side it looked just like this. Unbelievable! Sure enough the Naked Cowboy was out in the middle performing in his undies just like he does everyday of the year no matter the weather!

IMG_6204IMG_6214

They had a Body Works Exhibit so I went. In every city that I am in, if they have a show I go because they are all different. It is amazing how they are able to creat these beautiful sculpture with bodies that have been kindly donated. To see the muscles connecting to tendon and bone was just a reminder to me why I choose to eat healthy and exercise. Do I indulge at times? absolutely! But I always make sure to make each bite count!

IMG_6220

Speaking of making each bite count, I decided to indulge on a salted caramel cupcake from Georgetown Cupcake……. Sigh I took two bites, the first I wasn’t to sure on it and after the second small bite I spat it out. It was not worth it! In a city this big I wasnt going to blow my indulgence on something I really didn’t care for. I wanted to like you cupcake, I really did!

IMG_6231

Ok, it’s late in the afternoon and I’m starving! I walked by Carmine’s and much like Raw the place was full of happy people who looked like they were really enjoying the food.

IMG_6246

The first thing upon entrance I was greeted by a very friendly host who asked me how many was joining my Party “One please” he looked at me and smiled and recommended that I find 3-4 other people to join me because the food was family style, and that was no joke! I laughed and he asked if I would mind sitting at the bar where they offered smaller lunch options. “The bar? No problem.” lol.

IMG_6241

As I sat down I was asked right away by the bartender if I wanted a glass of wine. I noticed they Had Decoy Cabernet so I had to say yes. I asked when the bottle was opened he looked at it and said “Late last night but don’t you worry I am going to open a new bottle for you.” BONUS! That is the kind of service that will keep me coming back!

IMG_6232

What a sport the bartender was! The place was super busy but he still provided friendly chatter and laughter. Ok, I had my glass of wine now it was time to eat. Even the portion sizes on the bar menu were insane! I ordered again upon recommendation the meatball garlic sub and wow it was fantastic! It came with a side caeser salad, and I would like to say I cleaned my plate but, finally after eating half the salad and HALF of the HALF sub I told the coach to pull me out, I was done! lol

IMG_6234

With a little room left in my tummy it was time to compare Manhattans…. Yum This one was in the lead and not because it was on the house (thank you bartender!) It was just really good!

IMG_6240

After some meetings it was time for dinner. It was 9:00 pm and people were just now getting out and about to eat which is good after that lunch I ate.

Next stop was HANDS DOWN the BEST during my whole trip!! Madison Street French Bistro. Again, I really enjoy the out-of-the-way places that only the locals know about, and I can see why they keep this place a secret! If I wasn’t so excited about this place and wanting to share I wouldn’t tell anyone about it so I could keep it to myself, but then that would be selfish.

IMG_6286

Again the glow from the inside was so inviting!

Once seated in the best spot in the house, I was greeted by a great smile and a friendly hello. “What can I make you to drink young lady?” Young lady lol sold!! ” His name was Omar and he told me that I was going to have the best Manhattan ever. “Perfect I will take ONE but stop me at Three! lol” just kidding I only had Four kidding! I had two. Both times the drink tasted the same and I enjoy consistency, nothing worse than going somewhere to experience the same flavor to only have it different.

I started of with Escargo. The BEST Ever!!!!! The butter, garlic and parsley was balanced so well I’m in LOVE!!

If the appetizer is this good I can’t wait for my entrรฉe.. Sea Bass on a bed of mashed fingerlings infused with fresh peas. I want to cry looking at this picture, I want it, I will try to recreate it one day. OR…. I will just have to go back.

Last, but not least dessert! Grand Marnie souffle’! The billowy souffle’ looked like a cloud that descended from heaven, and after one bite I was so happy that I didn’t eat the cupcake this was WORTH the indulgence!!!

What can I say Cigars are my weakness. What better place to get fine cigars than Nat Sherman?? I will be calling them to ship to me. The staff was delightful and informative “Yes I will take a dozen home!” Thank goodness for my traveling humidor.

Thank you for letting me share a small part of my trip with you. The best part of my trip was hands down the people!!! Everyone I talked to, or passed on the street provided smiles, and great suggestions.

Until we meet again, New York I love You!!

Cheers!

It Has Been A Great Year!

I can’t even begin to tell you how blessed I have been this past year! 2014 was filled with so many new experiences for me, and some I had to do afraid.

Some of the best experiences I have had were the people I have met. I have made some amazing friends this year.

I’ve seen more new places this year than I have in the past 10, and some of them were in my own backyard. I have taken the town I live in for granted and will no longer do that. At least once a month I will go check out a new town and see what it has to offer.

I have enjoyed many beautiful sunrises and sunsets. It’s nice to wake up before the rest of the world and wonder what that day will bring. Then after, watching the sun set as I reflect on the events of the day.

As well as blessed to have friends supply me with wonderful fresh produce.

My love for cigars and wine has grown quite a bit as well as my knowledge about them. I look forward to taking a competitive wine class this year.

As 2015 begins I can already tell this will be a big year for me full of many new experiences. I will continue to try to be a better person than I was yesterday, and will always try to give 10x’s more than I take.

Blessing to you all

Cheers! Nicole
