Banana Nut Smoothie

This girl has a birthday coming up really soon and before I turn another year older I have a running goal that I want to complete. So far it’s going really well and I’m ahead of schedule. Speaking of running, Please Don’t Leave Me by Pink is playing in the background and I need to remember to add it to my running play list.

I’m so excited to share this post running treat with you, I had it the other day and I fell In Loveย with it. The only problem for me was that it was higher in fat and calories than I would like for just a post run treat. Sooooo I spent some time trying to recreate this delicious smoothie and I got IT!

Instead of using 4 Tbsp of almond butter I replaced it with a powdered peanut butter that has only 45 Calories for 2 Tbsp and no FAT! The only ingredients in it are Peanuts Iย die! There is nothing wrong with using the almond butter, like I said for a post run recovery drink I’d rather save those extra calories and put whole almonds on my salad. The original drink also had 6 dates in it and I found that using 2 worked just as well. Maybe I’ll add those extra ones to my salad along with the almonds.;-)

Now so you can make this yummy smoothie, I will tell you…

What You Will Need:

1 Banana, peeled and sliced

2 Dates pitted

1 Tbsp Peanut Butter Powder

1 C Unsweetened Almond Milk

Now that you got everything Prep Your Mis en Place ๐Ÿ™‚

TIP: First slice up the bananas and place them in individual baggies. This is a gret pre week prep job.

Freeze the bananas untill you are ready to make your smoothie. This will help your drink to become silky.

Like this. Then add the pre packed banana to your blender and add two dates.

Add 1 Tbsp of powdered peanut butter.

Next, add in the almond milk.

There you go that’s it! You now have a post run smoothie to reenergize those tired achy muscles.

Its been awhile.. But I have a wonderful excuse and I’m so excited to share it with you all. My journey took me 516 miles away from my home in OZ, running through airport terminals hoping to catch an earlier flight towards my destination. I’ve often waited for my connection flights watching people run like mad towards their connection wondering, what were they in such a rush for? Were they in a hurry to catch an important meeting, rushing to see loved ones, or were they like me, rushing for my reason? So before I tell you my reason…

Meet baby EDEN. (Grand baby EDEN)

I was so honored to be asked to be there for the birth of my first grandchild. It took two days for him to come into this world and even all the coffee in the world couldn’t help keep us awake.

(Day one) After 24 hrs. I’m sucking down coffee like MAD.

The moment I started to shed my tears quietly was watching an expectant father keep his silent, constant watch over his wife, praying for a safe delivery for them both. Ready as a soldier (that he is) to jump at any moment to get her whatever she wanted, or needed.

After sometime I headed back to their home to get food ready and allow the sweet new family to bond in peace. So what did EDEN do?

I had a wonderful time that evening. It was a little lonely, but it was nice to be with my thoughts. Thoughts of his future… What will he be like when he grows up? Who will be the first to win his heart? Who will be the first to break his heart??…. Oh baby don’t you worry! Foxy has you! (Foxy is what they call me instead of grandma.) LOL.

Ok, baby is on his way so I better get to cooking meals for the new family to have for the week.

After the week flew by I was heading home…..

That had to be the loneliest plane ride home.. I was bawling! This time I slowly made my way through the terminal to catch my connection. There were no earlier flights to grab so I sat and watched others rushing around wondering if any of them were on their way to meet a new loved one coming into this world.?

Then I got a phone call from my son who said that they were going to baby EDEN’S appointment in the morning and if they get the “All clear” from the doctor they would be up the next day!

One day apart was too long.

In his sleep I would make silent promises to him that only he would know…. Then 2 weeks flew by and I had to say goodbye to him.

Eating Out With EDEN

As Strange Overtones by David Byrne and Brian Eno plays into my ears as I stroll down one of the main drags in Westchester New York I cant help but smile to myself as I’m in search for a culinary adventure. The day is absolutely beautiful! A lovely 72 degrees is slowly heating the area around me and I am hungry for some breakfast!

The best way to meet new people is to ask where their favorite restaurant is to eat. That is one thing everyone has in common with each other, we all need to eat! I find that people open up very quickly when you ask them where they love to fill their bellies and the one restaurant that came up often was…….

The Iron Tomato. What a cute fun name I couldn’t wait to see what they were going to delight me with! OOhh they have a patio so I shall dine alfresco. Right away I was hit by the smell of fresh-baked bread! I am in heaven. everything is made in-house and they offer up dishes to please the simplest of pallets to some adventurous ones like this!

Hmmmm. I would try this, I love adventurous food but it is only 7:00 AM and I’m thinking an egg white croissant sounds a little more morning friendly lol.

So now I have my sandwich and cappuccino and I’m eating out side and I look at my breakfast and my heart sank ๐Ÿ˜ฆ I was looking at the saddest breakfast sandwich I have ever seen outside of a Macdonald’s. I was kinda confused… How can a place that creates such yummy bites such as these..

Now Human by The Human League is playing and I’m slowly strolling through the streets of Westchester thinking of someone special wondering if I was being thought of as well.. suddenly my day-dream was interrupted by the grumbling in my tummy. It was now 6:00 PM and the only thing I had eaten so far was one bite of my sandwich and about 4 cappuccinos. This girl NEEDS to EAT!

Just as I look up the beautiful Ritz Carlton is standing in front of me ๐Ÿ™‚

I immediately get excited because I know hidden at the bottom of this hotel is BLT I die!!

Upon walking in, I do a quick sweep of the restaurant to inspect the cleanliness of it. The last thing I want to be doing is eating my food as I stare at the ceiling fan wondering if that huge hunk of dust will fall and land on my plate! No thank you! I will leave at the drop of a hat if the place looks shady in any way.

As I thought, this place did not disappoint. there was not one speck of dirt or dust anywhere and if you want to see if a place is really taken care of, check out their plants and see if their leaves are clean and dusted ๐Ÿ˜‰

Dinner for me is an event, I like to take my time and order one course at a time. Appetizer and a Chopin Vodka martini straight up with the little pickled onions to start, I finish that then I order a salad with a glass of wine then I order my entrรฉe with another glass of wine. 2-3 hours is perfect for me and all to often many places want you in and out, but not here.

As with most places they serve you bread to start but this is no ordinary place!! They start you out right off the bat with a culinary treat! Popovers!! It was soooo amazing! Huge and hot, crusty on the outside and soft and doughy on the inside. I think one more of these and I would be walking out the door stuffed before I even ordered anything to eat.

So setting aside my popover I ordered a ceaser salad with fresh anchovies.

WOW is all I can say! If you can take a simple salad and make it special, there’s real talent there! The romaine was crisp and cold, the anchovies salty, and the house made dressing and croutons were divine. Okay so my martini and salad are finished, it’s time to order the next course.

Ahi Tuna tartar with avocado and a citrus soy with a glass of wine on the side was next on my list.

What can I say? Is there even a word to describe what you see?? I will try.. Absolute perfection I AM IN LOVE WITH YOU!!!

Oh NO! I am soooo full! I really want to try to order my next course but I just cant do it. Instead I op for one more glass of wine to enjoy on the patio while I enjoy an evening cigar. I am by myself and As I reflect on my dining experience that I just had (1 1/2 hours) I realize and giggle to myself that it’s a good thing I enjoy my own company. That moment was the best experience I had my whole trip. I was in total peace and everything that was going on during that time didnt matter anymore. I was going to be ok.

Miko’s Make You Feel Better White Chocolate Macadamia Cookies

Hmmmmm.. How are White Chocolate Macadamia Cookies WAISTLINE FRIENDLY??? They are if you eat them in moderation ๐Ÿ™‚ Plus using organic quality ingredients help out as well. Lets face it, sometimes you just want a cookie! I like to eat highly nutritious food so if I’m going to splurge on a dessert other than fruit I am going to make sure its worth it!!ย  I have no guilt on tossing something that doesn’t hit the spot right. I will be honest, I just had knee surgery the other day and I’m feeling kinda sorry for myself so I was completely delighted when Miko made her “Make you feel better cookies” for me ๐Ÿ™‚

I’m listening to My Moon My Man by Feist and her voice is like a siren calling me out to sea. I want to get up and dance but I’m going to contain myself for at least one more day. A girls gotta heal lol.

I am sipping on a cappuccino it’s not to bad, but I’d rather be drinking a glass of this..

Oh no don’t cry Eden! I better get to telling you

What You Will Need:

2 1/4 C all-purpose Flour (Organic if you can)

1 tsp Baking Soda

1/4 Tsp Salt

1 C Light Brown Sugar, firmly packed

1/2 C White Sugar

1 C Salted Butter, softened

2 Large Eggs

2 tsp Pure Vanilla Extract

1 C Macadamia Nuts, coarsely chopped

1 1/2 C White Chocolate Chips

Pre Heat your oven to 350 and set your butter out to soften.

In a glass bowl, mix in the firmly packed light brown sugar, and white sugar.

Next add in the soft butter, vanilla, and pretty yellow orange eggs.

Mix well.

In a separate glass bowl, add in the flour, salt, and baking soda.

Then add in the white chocolate, and macadamia nuts. Mix well.

Now, add in your wet ingredients and mix well.

Set out a sheet of parchment paper and begin to roll the mixture into round balls. About a golf ball size.

Place the balls on a cookie sheet and bake for 10-12 minutes or until the edges begin to brown. Set aside on cooling rack and enjoy!!!!!!

Serving size 2 cookies:

170 cals, 9 G fat,22 G carb, 2 G pro, 1 G fiber

Creating Eden

Sigh…….. I am sitting here looking at one of the prettiest sunsets and there is a slight chill in the air so I have a small fire going and the smell of the pinion wood is intoxicating! It reminds me of New Mexico oh and it reminds me that a glass of Cakebread will go well with this moment.

To make a long story short, this weekend I lost all of my food photos and recipes that I have been spending quite sometime on so, what that means is that I am going to need a few more days before there will be a new posting ๐Ÿ˜ฆ

Baked Honeycrisp Apple Smoothie

This smoothie is so tasty and sweet it should not be healthy, but that’s the beautiful thing about Eating from Eden. Eating healthy does not have to be nothing but steamed veggies, there are endless possibilities when you eat from nature.

It’s amazing how this smoothie carries 11 Grams of Fiber, and 16 Grams of protein! You know what they say, “An apple a day keeps the Doctor away!” Speaking of apples, I can’t wait till my come in ๐Ÿ™‚

I can’t wait for spring!! As I sit in my office relaxing, I am sipping on my apple pie smoothie with a big smile on my face because I know you will enjoy it as much as I do. It’s taking me forever to write because I can’t stop drinking my smoothie and as I am, I’m making those mmmm sounds lol so I think the song Where Is My Mind by the Pixies is appropriate.

What You Will Need:

1 Honeycrisp Apple peeled, and cored

1 Tsp Truvia

1 Tsp Ground Cinnamon

1 Small container of Okios Tripple Zero Vanilla Yogurt

Prep your Mis en Place (I still love saying that)

Peel and core your apple

Put the apple slices in a glass bowl and add in the truvia, and cinnamon.

Microwave the apple slices for 4 minutes. (If you have time bake them in the oven instead.)

Stir the apples, then place them in plastic baggies once they are cooled.

Put the baggies in the freezer and let them chill for 1 hour or more.

Combine the frozen apple chunks with the yogurt in the blender.

Scoop out the smoothie into a glass and enjoy!!!

Makes 1 Serving: 230 cals, o g fat, 44 g carb, 11 g fiber, 16 g pro, 29 g sugar.

Extra: I like to bake, and freeze 6 -10 apples at a time and freeze them in individual baggies. So when I want a great snack in a hurry, all the extra prep work is already done.

If you want, you can add some flax or chia seeds to add crunch. If you don’t have either of those, use granola instead.

In Love With Eden

What Can I say? This has been the best Valentines Day ever!! So on this day full of lovey dovey, I want you all to know how much I appreciate you. So this is my little Valentine to you. I think of you readers as I cook wondering if the new recipe will please you as much as it pleases me. So to keep it food related I will tell you a few small things that I love about food.

But before I go on, I’m sitting here in my office with a cup of black coffee listening to the song I Will Wait by Mumford & Sons and I can’t wipe this grin off my face as I write to you ๐Ÿ™‚ The picture of the water-color flower is 1 of 4 beautiful watercolors my daughter painted for me. I LOVE HER!! She is so talented. Even better is the fact that these flowers will never die.

Ingrediants:

I can’t begin to tell you how much I love to find new ingredients. I love smelling the fruit and vegetables holding their flesh in my hands as I wonder “what can Iย  make with a particular ingredient.?” For instance look at these beauties!

I have never seen a purple bell pepper before, and I couldn’t help but think to myself “Where have you been all my life you lovely things?”

I love trying out new wines and new food.

Being afraid:

There was a time when I was afraid to try new things. I would use the excuse that I wouldn’t like it so I wouldn’t try it. One day I realised how silly is that to say “I don’t like this or that” without even trying it? I can tell you about 99% of the time I end up loving the food I am trying. I also love to try new experiences even if I have to do them afraid and once again about 99% of the time I love it.

Okay Eden, enough of the lovey dovey. I better get on with my day, The local seafood shop opens up at 10 and I know it will be busy with tons of people picking up fresh lobsters to share with their loved ones and I don’t want to end up with nothing but a clam to cook with ๐Ÿ˜‰

Lunch with EDEN

I’m not saying that I invented the wheel here but, my goodness the fact that I have not had this classic sandwich in years is beyond me! So I decided to remind you of a great lunch that meets all of your nutritional needs. My daughter even commented on how she could eat this sandwich everyday lol. Sometimes you just have to go back to the classics Except put a healthier twist on it. ๐Ÿ™‚

What You Will Need:

Baby Arugula

Heirloom Tomatoes, sliced

1 avocado, mashed

Thick Cut Bacon, cooked (Please buy your bacon from a local butcher instead of the pre packed packages. Not only is the quality 100 times better, it is also cheaper!!)

1 Egg, Poached

2 Slices of a quality Whole Grain Bread, toasted

*Directions

Prep your Mis en Place ๐Ÿ˜‰ It is lunch time and once again, I had a tough workout and need a pick me up so I am sipping on a Iced Americano as I listen to I Can’t Wait by Nu Shooz. Wow this song takes me back! And yes, I am dancing in my chair as I type this out.

Start out by cooking the bacon in a large pan on medium heat. Use a medium temperature because you don’t want to burn the bacon.

While the bacon is cooking, mash the avocado in a bowl and use this as your mayo.

In a small pot, bring some water to a soft boil and poach your egg, and drain the water from it.

Bing! You are done cooking, it was that easy so lets build our sandwich now.

On a piece of toasted bread, spread the mashed avocado on it.

Layer a generous amount of arugula on top. The arugula adds such a nice peppery flavor to the sandwich.

Next add as many tomatoes as you want.

It’s so pretty!! And all the different colors in the vegetable are what makes your body healthy!!!

Lets add some bacon to this baby!

Now top that with a poached egg.

Serving is 1 Sandwich:

328 Cals, 21.7 G fat, 21.1 G carb, 7 G fiber, 15.8 G pro, 4.2 G sugar

Extra: This also makes a great breakfast sandwich as well.

Baked Pears with Ginger Honey Ricotta

Ever have one of those days where you could eat a ton of sugar only to regret your choice after? I have days like that from time to time, we all do. I am always so delighted when I can figure out a healthy way to satisfy my sweet tooth that provides No Guilt afterwards! I hope you find that this dish treats your sweet tooth and waistline just as well.

What You Will Need:

2 Large Pears, peeled, cut in half, cored

1 Cup Low Fat Ricotta Cheese, divided into 4

1/4 Cup Walnuts, crushed divided into 4

2 Tbsp Honey, divided into 4 (Use a local honey to help with your allergies.)

1 Tsp Powdered Ginger

1 Tsp Ground Cinnamon

Directions:

Prep your Mis en Place ๐Ÿ™‚ This afternoon playing in the background is Goodbye Horses by Garvey. I just cant help but dance around whenever that song plays. I am sipping on a glass of Citrus Lavender tea while I wait to dive into one of these babies.

First thing is to pre heat your oven to 350.

Peel, then cut in half your pears, and with a melon baller scoop out the core.

On a cookie sheet lined with parchment paper, line up your pears then bake for 20 minutes.

While the pears are baking, mix together in a glass bowl the ricotta, ginger, cinnamon, and honey.

Once the pears are done baking, top with 1/4 cup of the ricotta mixture, then sprinkle with walnuts and a small drizzle of honey if you wish.

Makes 4 Servings: 138 cals, 3.7 G fat, 24.1 G carb, 2.7 G fiber, 5.9 G pro, 18.5 G sugar

Extra: That is it! It is that easy to make this healthy dish! You can also use this as a great snack or breakfast dish.
