Beets with Raisins and Fresh Mint

Another beet recipe? What can I say, my local store had a special on these organic beauties 🙂 Besides that, they are delicious, nutritious, and when you can create a belly filling meal that’s super easy it’s a bonus!

What You Will Need:

1 Bunch Of Beets, peeled, and shredded

6 Carrots, peeled, and shredded

2 Lemons, juiced

1/2 C Golden Raisins

1/4 C White Wine Vinegar

1/4 C Olive Oil

1/4 C Raw Pumpkin Seeds

1/4 C Fat Free Feta

1/2 C Flat Leaf Parsley, Chopped

1/2 C Mint, Chopped

2 Cloves of Garlic, Minced

1 tsp Crushed Red Peppers

Salt And Pepper

Pour the Wine, tonight I’m drinking a Pinot Blanc. This wine has a wonderful citrusy flavor of green apples and citrus that goes very well with this dish. So Beautiful! Dont forget the music! Lightly playing in the background is the song Afraid by The Neighbourhood. Ok so its playing Loudly lol.

Now you are ready to prep your Mis en Place 🙂

In a glass bowl, add the vinegar, raisins, and garlic. Set aside for 30 minutes.

In a separate bowl, shred the peeled beets.

Next, shred the carrots.

Add in the chopped mint, and parsley.

Juice the 2 lemons, and add in the crushed red peppers.

Once the vinegar raisin mixture has soaked for 30 minutes, pour it into the bowl with the beets and add salt, pepper, and olive oil,

Mix well, and top with feta, and pumpkin seeds.

There you go! Your done and you now have a salad or side dish that will make people’s eyes POP!

Makes 5 Servings: 174 Cals, 5.5 G fat, 21 G carb, 7.5 G fiber, 8.2 G pro, 11.2 G sugar

Extra: If you don’t like pumpkin seeds, you can switch it out with any nut you like. Pine nuts work very well with this salad. Same with the cheese, if you don’t like feta use a beautiful gorgonzola cheese.
