Greek Salad Bites

I love the idea of using the butter lettuce leaves as a vessel for the Greek salad! It’s nice to be able to just pop one in your mouth as your mingling at a party.

What You Will Need:

1 Head of Living Lettuce, leaves peeled

2 Cups Grape Tomatoes, quartered

6 Baby Cucumbers, sliced

1/2 Cup Black Olives, sliced

1/2 red onion, diced

1/2 Cup Fat Free Feta

1/4 Cup Red Wine Vinegar

Salt and Pepper to taste

Directions:

Turn on the Music, pour yourself a drink, and prep your Mis en Place 🙂 I’m listening to On Top by The Killers and it’s snowing here so I’m sipping on hot chocolate.

Add all the ingredients beside the lettuce leaves together in a glass bowl cover, and shake.

That’s it! Youre ready to assemble your bites.

Makes 20 a serving is 3 stuffed leaves:

123.1 cals, 5.7 G fat, 12.3 G carbs, 2.6 G fiber, 8.3 G pro, 6.4 G fiber

Be safe tonight, and if you are hosting be responsible for your guests have a place they can stay the night just in case or have a safe ride home available to them. If you are going out  tonight Designate a driver.
