Shrimp with Cauliflower “Grits”


I can’t even begin to tell you how EASY and Delicious this is to make!! It’s so full of protein and vegetables it should be sinful! πŸ™‚

What You Will Need:

1 Pound of Shrimp, peeled and deveined (Add more shrimp if you would like.)

1 Head of Cauliflower, broken into florets, steamed or boiled

4 Lemons, juiced

Zest of 1 lemon

4 Cloves of Garlic, minced

1 Clove of garlic, peeled

1 bunch of Green Onions, sliced

4 Tbsp Butter

Salt and Black pepper to taste

Cayenne pepper to taste


Set up your Mis en Place πŸ™‚


In a steamer, steam the cauliflower with one clove of fresh peeled garlic. If you do not have a steamer, just boil the cauliflower until it is soft.


While the cauliflower is steaming, in a pan on the stove set to medium heat add the fresh minced garlic, lemon zest, salt, and pepper.


Add the butter and allow it to slowly melt.


While that is melting, juice your lemons.


Once the butter has melted, cook the garlic until it becomes golden brown then add in the lemon juice and shrimp.


Cook the shrimp for 3 minutes. Be careful the shrimp can over cook so fast. Remove from heat.

Once the cauliflower has finished steaming, put it in a blender.


Blend the cauliflower until it is smooth.


I can’t believe how much this looks like mashed potatoes or grits!


Place a serving of cauliflower on a plate and top with your shrimp and sauce. Garnish with sliced green onion and cayenne pepper! Yumm!

Extra: If you want to add a bit of kick to your shrimp, add some minced jalapeno to them while cooking.

As you all know grits are made with a lot of butter and cheese. Using the cauliflower not only saves your waistline, but it gives you such a nutrient boost as well! The flavor is amazing and doesn’t need any dressing up. BUT if you want that cheese taste, simply add grated cheese to the mashed cauliflower and fold it in.
