Jicama with Avocado and Spiced Pomegranate


I am so happy that pomegranates are in season! They are so delicious, and nutritious you will probably see them in a few of my upcoming recipes! Or at least until they are out of season.

What You Will Need:

1/2 C Pomegranate seeds

1 Small Jicama, peeled, sliced thin, then cut into match sticks (you can cut them into chunks if you prefer.)

Juice of 1 Lime

3 Large Oranges, peeled and segmented

1/4 C Fresh Cilantro, chopped

1/4 tsp Chipotle chili powder

1/4 tsp salt

2 Avocados, peeled then chopped

3 Tbsp Gorgonzola Cheese, crumbled


Set up your Mis en Place 🙂 Are any of you finding your cooking to be a bit easier by doing this step first?


Cut the oranges into segments by first cutting off the top and bottom then, cutting the rest of the peel off.


In a glass bowl cut the peeled orange into segments so you only have left the membrane.

Squeeze the juice from the membrane into the bowl.


In the same bowl add the jicama, avocado, lime juice, pomegranate, cilantro, salt, and chipotle.


Top with Gorgonzola.

Mix well and chill for about 15 minutes Enjoy!

Extras: You can also use a Parmesan cheese if you prefer and toasted pine nuts instead of pomegranate seeds if you wish.
