Very Berry Arugula Salad

What You Will Need:

3 Large Strawberries, quartered

1/4 C Blueberries

1/4 C Raspberries

2 C Arugula

3 Walnuts, crushed

1/4 C Chickpeas, toasted

1 Tbsp Reduced fat Blue cheese crumbles

1/2 tsp Chipotle chili powder

*Directions

Pre heat your oven to 400.

On a cookie sheet, spread the chickpeas evenly out then sprinkle on the chipotle powder and toast for 8-10 minutes. Set aside when done cooking.

The chickpeas will turn a dark honey color when they are done.

Assemble your salad with all the ingredients.

*TIPS

I like to keep extra toasted chickpeas in my refrigerator along with cut up fruit. It makes it so much easier to toss a healthy salad for those times when I am hungry and leaves me no excuses to not Eat From Eden.
