Arugula with Orange Soaked Raisins and Gorgonzola

What You Will Need:

8 C Arugula

2 chicken breasts, baked then sliced

16 spears of Asparagus, wooded ends removed then steamed

4 Red Potatoes, quartered then steamed

4 Tbsp Gorgonzola cheese

4 tsp Pine nuts

1/4 C Golden Raisins

Juice from 1 Orange

Zest from 1 Lemon

Salt and Pepper

*Directions

Pre heat your oven to 380. Rub the chicken breast with salt, pepper, and lemon zest. Bake for 25 minutes.

In a glass dish, soak the raisins in orange juice and set aside.

Steam the red potatoes for 20 minutes. If you don’t have a steamer you can roast or boil them.

When there are 8 minutes left on the steamer for the potatoes, add the asparagus and finish steaming.
