What You Will Need:
1 large zucchini, cut into 1/4 inch pieces
1 large yellow squash, cut into 1/4 inch pieces
1 red onion, cut into 1/4 inch pieces
1/2 pound of mushrooms, quartered
8 spears of asparagus
1 large red bell pepper cut into 1/2 inch slices
* Directions:
On a grill, grill the zucchini and squash until you make a caramel colored grill mark. Set aside
Next grill the remaining vegetables until you see charring on them (black colored)
Place all the vegetables together in a bowl.
*For The Dressing
1 bunch of basil, chopped
juice from 1 orange
1 C of white wine vinegar
1 clove of garlic, minced
2 Tbsp Dijon mustard
1/4 tsp salt
1/2 tsp olive oil
*Directions
In a glass jar (or anything with a lid) mix all ingredients together, and shake.
Pour the dressing over the vegetables
*Makes 4 servings
