Golden Beets with Pine Nuts and Currants

What You Will Need:

1 C of golden beets peeled and cut into cubes

1/2 tsp olive oil

1/2 tsp Thyme

2 tsp blue cheese crumbles

1 tsp raw pine nuts

1 tsp dried currants

1 pinch of sea salt

1 pinch of black pepper

*Directions:

Pre heat your oven to 350.

Peel and cut your beets into cubes.

place beets on parchment paper and drizzle with olive oil, salt, pepper, and thyme.

Roast the beets for 20 minutes then set aside to cool.

Toss your beets with blue cheese, pine nuts, and currants add salt to taste.

*Makes 1 serving:

* I like to make a big batch of roasted beets to keep in my fridge for easy lunches, or for a great side to dinners.
