Chicken Noodle Soup on Cauliflower Mash


What You Will Need:

4 chicken breast baked then diced

1 C peas

1 C corn

4 Large carrots diced

4 Large celery stalks diced

1 white onion diced

2 Tbs tomato paste

8 C chicken stock

2 Tbs thyme

3 cloves of garlic minced

1 1/2 C egg noodles (reames is a good one)

salt and Cayenne pepper to taste

*For the cauliflower Mash follow the directions on the Post Cauliflower Mashed Potato Style


Pre heat the oven to 350 and bake the chicken breast for 10 minutes.

In a medium-sized pot cook the onion, carrot, garlic, and celery until the onion becomes translucent.

Add the chicken stock, and tomato paste and bring to a boil.

Dice the chicken breast up and add to the pot and lower to a simmer.

Add the corn, peas, egg noodles, and thyme.

Continue to simmer for 20 minutes and add salt and cayenne to taste.

Serve over the cauliflower mash.

* A serving is 1/2 C cauliflower Mash with 1 C chicken noodle soup
