Paleo Blueberry Lemon Muffin Bites


What You Will Need:

1/2 C maple syrup (You can use sugar-free if that’s what you prefer.)

3/4 C almond butter

1/4 C lemon zest

1 1/2 C fresh blueberries

1/2 C unsweetened coconut shreds

1 C almond flour

3 eggs

1/4 C coconut oil

1/2 tsp baking powder

1/2 tsp baking soda

1 tsp cinnamon


Preheat your oven to 350

Put all the ingredients into one bowl and mix well. (I know your supposed to add the dry ingredients first and mix then add your wet ingredients, but I’ve never had a problem adding them all together at the same time.)


Line your muffin pan with baking cups

Fill muffin cups 3/4 of the way up to the rim


Bake for 10 minutes

*Makes 40
