Kung Pao Salmon with Sweet Potato

What You Will Need:

2 sweet potatoes peeled and cut into 1 inch cubes

2 tsp olive oil divided

2 tsp cinnamon

1 large crown of broccoli broken into florets

1 bunch of green onions sliced

1/4 C low sodium soy sauce

1/6 C rice vinegar

2 cloves of garlic minced

1/2 tsp Sriracha hot sauce

1/2 tsp chili flakes

2 salmon filets cut into 1 inch cubes

2 Tbs peanuts

Directions:

Pre heat oven to 375.

Toss sweet potato with 1 tsp olive oil, cinnamon, salt, and pepper then spread it out on baking sheet.

Bake for 15 min.

Toss broccoli with 1/2 tsp olive oil, salt, and pepper.

After the sweet potato has baked for 15 minutes push them to the side of the baking sheet and add the broccoli and cook for another 15 minutes.

In a small bowl mix ginger, soy sauce, rice vinegar, Sriracha sauce, garlic and chili flakes then set aside.

In a large pan on medium high heat, cook salmon in the rest of the olive oil for about 5 minutes.

Add the sauce, sweet potatoes, and broccoli to the pan.

Mix well together and then add green onions, and peanuts. Cook for 1 more minute
