What you will need:
1/2 pound tomatillos husks removed then chopped
1 small white onion diced
1 Tbs white wine vinegar
1 package of 99% lean ground white turkey breast ( you can use bison, or sirloin)
1 avocado pitted and cut into 8 slices
4 slices of Pepper jack cheese
Salt and black pepper
4 100 calorie whole wheat bread buns
Form the turkey, salt, and pepper into 4 round patties and grill them for about 4 minutes on each side. If you cook them in a pan I would cover it with a lid to keep the steam in so they stay moist. There is no fat in the meat so it can dry out quickly.
While the patties are cooking, in a pan on medium high heat cook the onions, and tomatillos for about 8 minutes then add the vinegar, and a pinch of salt and continue to cook for 1 more minute.
Toast the bread if your eating it then assemble your burger. Bun, patty, pepper jack, tomatillos, avocado, and bun!
* I mostly stay away from breads and grains so I will either eat it without the bun, or I will use a lettuce or cabbage cup instead.
