Breakfast stuffed Bell Pepper

What You Will Need:

1 green bell pepper top removed and seeds removed

1/4 tomato diced

1/5 C red onion diced

1/3 C mushrooms washed, and sliced (be sure to pat the mushroom dry so there wont be water in your pepper. (If there is water in the pepper, simply drain it out. It wont do anything to the taste)

1/4 C spinach

1 large egg

1/2 clove of garlic minced (1/3 tsp garlic powder is fine).

1/2 ounce of cheddar cheese if you eat dairy

Salt and pepper to taste

*Directions

Pre heat oven to 400

In a bowl mix all the ingredients together except for the bell pepper and cheese.

Pour veggie mixture into the bell pepper and cover with the cheese.

On a cookie sheet cook for 20 minutes or until the cheese is golden brown IMG_2696

*serving is one pepper

*Without cheese– 117.8 cal 5.3 G fat 9.4 G carb 3.3 G fiber 9.3 G pro 4.1 G sugar

* These are so easy and fast to make. The different combinations you could do are endless.
